Laing-Filipino Dish For Anemia & Diabetes

Taro leaves and coconut milk have low fat content and a relatively medium GI. Hence, diabetic patients can opt to include this dish in their diet plans. The dish may also help in alleviating anemia as taro leaves are high in iron. The dish can also be applicable for CVD patients as coconut milk contain Medium-Chain Fatty Acids which are easily metabolized in the body rather than stored. However, intake must be in moderation as it still contains fat which may pose risks for aggravating heart diseases.
Preparation time: 30 minutes
- 1. Dried Gabi leaves- 4 cups
- 2. Coconut milk- 5 cups
- 3. Pork loin/shoulders- 0.5 lbs.
- 4. Onion- 1 pc medium sized
- 5. Garlic- 3 cloves
- 6. Ginger- 2 thumb-sized
- 7. Shrimp paste- 1 tbsp.
- 8. Chili Peppers- 3 long pcs.
- 9. Salt- as needed
- 10. Cooking Oil- 1 tbsp.
1. Boil pork loin/shoulders. While waiting for the pork to boil, chop onions, mince garlic, and cut the chili peppers and ginger into strips. Cut the pork into strips after boiling.
2. Heat cooking oil then add and sauté garlic, onion, and ginger. Cook until garlic turns golden brown. Add the pork loin/shoulders strips and cook for another 2 minutes.
3. Add the shrimp paste, coconut milk, dried Gabi leaves, and chili peppers. Simmer for 15 - 20 minutes, while stirring occasionally and adding salt to taste.
4. Cook until the fat is rendered and coconut milk is absorbed by the Gabi leaves.
The dish is best served with rice.

· Taro leaves are good source of dietary fiber, vitamin B, C, and E, calcium, folate, iron, magnesium, phosphorous, potassium, magnesium, riboflavin, and thiamine. MCFA is a kind saturated fatty acids but unlike the typical saturated fats, they are rapidly metabolized into energy in the liver and is unlikely to be stored. However, the consumption of coconut milk should be in moderation since it is still a type of fat.
