In desperation to get my BS under control, in May of 2016, I decided to cut all the main carbs--bread, rice, potatoes, and pasta. Instead of fixing one high carb veggie and one low carb veggie, I started fixing 2 low carb veggies when I cooked lunch. My BS levels started to come down. I remembered my body would get so weak. I felt like I needed carbs to function. About every 3 or 4 days, I would eat a sandwich using regular bread. (I did not know at the time, I was experiencing the keto flu)Â
2 Months: After about 2 months, I ran across the keto diet in the midst of all the research I was doing. I thought to myself “I am already doing this except for the high fat part†(did not know about the high fat part). I read that people were reversing T2 diabetes using this diet. I did not know this could be reverse. This put a whole new twist on everything. When I learned T2 diabetes could be reverse, I was highly motivated to learn more. (After watching my mom die from this disease, and learning the disease could be managed and even reversed, I made up my mind that I did not want to die this way).
I started studying the diet, started incorporating the healthy fats, and I monitored and planned all my meals and micros. I used MFP. I bought a machine that tells me if I am in ketosis. I am now considered fat adapted. I burn fat for fuel instead of carbs.Now, my BS stays in the normal range most days. Still have a little problem with morning highs but not as high as they were a year ago.
Off Meds: I have been off diabetic med since January 30th 2017. My A1C is down to 6.2 and have lost 50 lbs. Still have a ways to go. I am slowly losing the weight but it is steady. Some people lose weight fast on this diet. I don’t want to lose it too fast. I don’t want all the loose skin.
I would like to see my A1C around 5. I am 54 and I am in better health and shape now than I was 5 or even 10 years ago. 3 or 4 years ago, I could not walk over 5 min without my hip giving out. I started doing hip strengthening exercises. Now, I can walk 60 min using 3 lb hand weights.

One thing is for sure, my physical body will die one day. However, I refuse to die from a disease that can be reverse. Now, I am pain free, BS are staying in the normal range, have lots more energy, can do EF without getting hungry, totally love this way of eating...I have discovered that you go through different stages but you have to hang in there!
