Health Benefits of Sun Dried Tomatoes:
One cup of Sun-dried tomatoes provides 23 % of the daily recommended value of Vitamin C and 16 % of Vitamin A. Vitamin C is a very important antioxidant compound that neutralizes free radicals present in the body. In addition, Vitamin A has many essential antioxidants like lycopene, lutein, and zeaxanthin. Lutein and zeaxanthin protect eyes against macular degeneration and cataracts, while lycopene lowers risk of cancers especially prostate cancer.
Sun dried tomatoes are rich in calcium and magnesium, that help to keep the heart healthy. Calcium stimulates heart muscle contraction while magnesium helps relaxation of the heart muscles. Both of these minerals regulate blood pressure and coordinate regular contraction and relaxation of blood vessels in the heart.
100 g of Sun-dried tomatoes can provide approximately 9 mg of iron. Iron is an essential mineral in hemoglobin, that is an essential component of red blood cells and helps in carrying oxygen to cells. Moreover, Vitamin C present in the sun-dried tomatoes helps absorb iron in the blood.
