Spinach Health Benefits:
Spinach is rich in phytonutrients and epoxy xanthophylls like neoxanthin and violaxanthin, that are two anti-inflammatory compounds. These compounds reduce inflammation and prevent onset of cancer. In addition, Spinach is rich in antioxidant nutrients like Vitamin A, Manganese, Vitamin C and E. All of these antioxidants reduce  risk of diseases due to oxidative stress and prevent onset of high blood pressure, atherosclerosis, macular degeneration, and heart diseases.
Spinach contains the vital micronutrient, Vitamin K. Vitamin K1 prevents activation of osteoclasts, the cells that bring about a breakdown of bones. Moreover, when Vitamin K1 is converted to Vitamin K2 by gut-friendly bacteria, it activates production of osteocalcin, a bone protein, that anchors  calcium in the bones.
Spinach contains carotenoid compound, zeaxanthin, that gets absorbed in retinal macula lutea present in the eyes. The compound provides anti-oxidant and light filtering activities in the eyes, thus protecting eyes from age-related macular degeneration.
