Southwest Tofu Scramble

Renal Research Institute has claimed about the good effects of Southwest tofu scramble for diabetic patients. Tofu is a good source of protein with minimum fat content while the vegetables are good sources of fiber. The ingredients in the recipe are low in glycemic index hence ideal for diabetic patients.

  • Cook the tofu with the spices of choice for 4-6 minutes or until the tofu turns brown. Cook the other vegetables for 3 minutes or until tender. Add the tofu and stir for another 2 minutes. Top with cheese, salsa, and cilantro.
