Rissotto with Pumpkin Recipe


Pumpkin often overlooked except during fall is an excellent source of potassium that can help restore electrolyte balance for your body. It is one of the best nature’s energy bar.

 

1 : :  cup: :  rissotto rice: : 
15 : :  oz: :  pumpkin: : 
1 : :  tablespoon: :  olive oil: : 
3 : :  cups: :  broth: : 
1 : :  oz: :  pumpkin seeds,unsalted: : 
1 : :  pinch: :  cumin: : 

Preparation:

1. Put rice in a saucepan and sauté it in bit of olive oil.

2. Once it begins to glitter add the broth.

4. Pour in the diced pumpkin. Season it and pour two cups of liquid in it.  One serve is ¼ portion of entire meal.


Pumpkin is one of the vegetables that is easy to digest and is packed with fibers that can prevent a buildup of stomach acids. Moreover, pumpkins and pumpkin seeds are highly alkaline foods which neutralize the excessive stomach acidity and decrease GERD.
