Instructions

  • Papaya should be ripe and should be first chopped before blending with sugar.Reserve some papaya cubes for the toppings. The mousse sets for 2-3 hrs. Serve the mousse immediately to avoid nutrient losses. Instead of using whip cream, a Greek yogurt for a healthier choice; for vegans, blenderized cashews can be used instead.

Ripe papaya is rich in folate, beta carotene and vitamins C and E. Protein digesting enzymes like papain and chymopapain helps in proper digestion of proteins. Cardamom is rich in zinc while cashew nut provides good fat and oleic acid for proper digestion. Combination of these actions alleviates acid reflux.

First, some basics:

– Malondialdehyde (MDA) is among the end products of polyunsaturated fatty acids peroxidation in cells. An increase in free radicals causes overproduction of MDA. Malondialdehyde level is usually called a marker of oxidative stress and the antioxidant status in cancerous patients.

– Glutathione (GSH) is an antioxidant in plants & animals. Glutathione is effective at preventing damage to important cellular components due to reactive oxygen species like free radicals, peroxides, lipid peroxides, and heavy metals.

– Superoxide dismutase (SOD) is an enzyme which alternately catalyzes the dismutation of the superoxide radical into ordinary molecular oxygen or hydrogen peroxide. Superoxide is produced as a by-product of oxygen metabolism and, if not controlled, causes several kinds of cell damage.

Chloramphenicol acetyltransferase (CAT) is a bacterial enzyme that detoxifies the antibiotic chloramphenicol and is responsible for chloramphenicol resistance in bacteria

The obtained results demonstrated that, acrylamide caused significant increases in MDA and reduction of GSH level, SOD and CAT activity because of the oxidative stress induced by acrylamide on membrane polyunsaturated fatty acids in rat’s stomach, kidney and liver while management of CPF aqueous infusion, was significantly ameliorated the increased levels of MDA and decrease of GSH, SOD and CAT activity in the gut, liver and kidney cells due to acrylamide toxicity. Meanwhile, CPF aqueous extract significantly increased immune functions (IgG and IgM) while acrylamide significantly reduce it especially IgG. Thus, this study indicates that acrylamide-induced oxidative stress in rats could be ameliorated by way of CPF aqueous extract.
